Authentic Andalucian Gazpacho

I used my VitaMix to make this delicious soup, but you can use a food processor as well.

Recipe:

3 cups of canned tomato sauce

1/3 cup of red wine vinegar

1/4 cup of organic extra virgin olive oil

2 large tomatoes (I used the beefstake kind)

2 cucumbers, peeled and cut into chunks

4 cloves of garlic

1 small onion, peeled and quartered

1 sweet red (or green) bell pepper (preferably organic) seeded and quartered

1/2 teaspoon of fresh tarragon leaves

salt and pepper to taste

 

Instructions:

1. Place all ingredients into the Vitamix container in the order listed and secure lid.

2. Select Variable 1

3. Turn machine on and quickly increase speed to Variable 5

4. Blend for 45 seconds

5. Stop machine, season soup if necessary and serve immediately

 

Cook's Commentary:

This gazpacho came out amazing! The combination of flavors was just right and I didn't even need to season it afterwards. Perfect for a hot and humid Spring or Summer day!
