Awesome Arame
Awesome Arame with Carrot, Cabbage and Onion
Ingredients:
2 cups of Arame, soaked (I like the EDEN brand)
1 Tablespoon of Toasted Sesame Oil
1 large onion, thinly sliced
2 carrots, thinly sliced into matchsticks
1 cup of filtered water
1 cup of diced green cabbage
shoyu or Tamari, to taste
1. In a medium size pot (preferably cast-iron if you have it), saute the onion in sesame oil until translucent (about 3 minutes)
2. Add carrot, arame and water to the pot
3. Cover and bring to a boil. Reduce heat to low
4. After simmering for about 10 minutes, add cabbage and continue to simmer, covered, for another
5-10 minutes
5. Season with shoyu soy sauce or Tamari (wheat free) and cook for 3-5 minutes longer
6. Garnish with chopped scallions and serve with cooked brown rice or wheat-free soba noodles.
